Recipe for Post # 34 Snackin’ Bars

  • 1 cup graham cracker crumbs
  • 1 Tbl melted butter
  • 5 oz evaporated (not condensed) milk
  • 1-2 Tbl honey
  • 1/4 cup wheat germ
  • 1/4 cup grits (whatever kind you like)
  • 1 cup shredded coconut
  • 1/4 cup sesame seeds
  • 1/2 cup finely chopped nuts
  • 1/2 cup roasted sunflower seeds
  • 1/2 cup mini chocolate chips
  • 1/2 cup mixed dried fruit (any mix or single fruit will do, my favorite is cherry or blueberry)

Heat oven to 350.  Combine all ingredients in a bowl and mix thoroughly.  The dough will be stiff and sticky.  Oil an 8x8x2 glass baking dish.  Press mixture firmly into baking dish.  Bake 20-25 minutes.  Cool ten minutes then cut into 6 even bars by cutting three even strips in one direction, and then cutting across at the halfway point in the other direction.  Cool completely and remove.  Wrap individually in plastic wrap.  Freeze.

Options:  Add 1/2 cup of oatmeal.  Spread top with layer of favorite jam.  Add sweet spices in small amounts.  Add raisins.  Dot the top with whole nuts.  Add 1/4 cup of cocoa to mixture.  Go crazy!

    • Wow, thanks for the compliment! Sorry it took so long to get back to you. I’ve been out of commission with the flu. There’ll be a new update tomorrow. No, it’s not a paid theme, just one of the free ones that Word Press offers. As a struggling writer, I can’t afford to spend bucks on things like that.
