Recipe for Post # 11 Spice Cake

  • 2 1/4 cups flour
  • 2 cups sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cinnamon
  • 1 cup water or milk
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • 1 cup furiously boiling water

Sift together all dry ingredients.  Add all wet ingredients EXCEPT the boiling water.  Mix thoroughly until there are no lumps.  Carefully stir in the boiling water being careful not to splash or burn yourself.  The batter will be very thin.  Pour into prepared pan(s).  I usually make a 9 x 13 sheet cake out of this, but a layer cake is good.  Bake at 350 for 20-25 minutes until a toothpick inserted into the center comes out clean.  Cool completely and frost.

I usually frost with a Vanilla Cream Cheese frosting.  Sometimes I dust cinnamon over the top of the frosting; other times I incorporate 1/4 tst cinnamon into the frosting.
