Recipe for Post # 23 Thai Beef Jerky

  • 1 pound beef
  • 2 limes
  • 1/2 tsp kosher salt

Slice the beef into very small pieces, no more than 1 inch long, 1/2 inch wide, and 1/2 inch thick.  Place in a bowl.  Zest both limes and place in bowl.  Add salt and juice from one half lime.  Toss until well coated.  Heat oven to 275.  Lightly oil a large baking sheet with a rim and spread a single layer of beef.  Heat in oven for 30 minutes, then stir beef around baking sheet while squeezing juice from a half a lime over all.  Repeat at fifteen minute intervals until beef is dried and crispy.  Serve warm.
